Charred tomato and scallion salad

Ingredients:

  • 3 beefsteak tomatoes, cut into 1/2-inch slices
  • 1 bunch scallions, trimmed
  • 2 tablespoons extra-virgin olive oil 
  • 2 teaspoons kosher salt 
  • 1 teaspoon freshly cracked black pepper 
  • 1 lemon, halved 

Instructions:

  1. Heat up an outdoor grill or grill pan until it reaches high temperature.
  2. Mix the tomatoes and scallions in a bowl with the oil, salt, and pepper. Put them on the grill and cook until they have a charred appearance, about 2 to 3 minutes on each side. Take them off the grill and roughly chop the scallions. Move them to a cutting board and then to a serving platter. Squeeze some lemon juice over the top before serving.
