Charred steak pasta salad
Indulge in the delectable flavors of this charred steak pasta salad, featuring juicy grilled steak and vibrant, crisp vegetables. Ideal for summer gatherings.
Ingredients:
- Salt
- 3 cups fusilli
- 340g steak
- Cut clove of peeled garlic
- 1/2 cup mayonnaise
- 2 tablespoons tarragon vinegar
- 1/3 cup each finely diced red, green and yellow bell pepper
- 1/2 cup green or black olives (or a combination) packed in olive oil; chopped
Instructions:
- Boil a large pot of water with salt. Add the fusilli and cook until soft, for around 10 minutes. Once the pasta is ready, drain it, rinse with cold water, drain again, and dry it off. While that's happening, cook the steak on the grill or under the broiler for 3 to 4 minutes on each side, achieving a charred exterior and a rare interior. (If rare steak isn't your preference, you can use chicken instead) Once the steak is cooked, transfer it to a plate to rest; while resting, rub both sides with a clove of garlic.
- Mix mayonnaise, tarragon vinegar, and peppers in a large mixing bowl. Combine the cooked pasta with the mixture in the bowl
- Serve the pasta. Slice the steak into thin diagonal pieces and arrange them in the middle of the pasta; top with olives for garnish.
