Charred green bean salad

Ingredients:
- Kosher salt and freshly cracked black pepper
- 450g green beans, end trimmed
- Juice and zest of 1 lemon
- 1 clove garlic, grated
- 1 tablespoon Dijon mustard
- 2 teaspoons fresh oregano, finely chopped
- 1/3 cup olive oil
- 1/3 cup crumbled feta
- 1/4 cup sliced toasted almonds
Instructions:
- Prepare a grill for indirect grilling. If you are using a charcoal grill, arrange the hot coals on one side only. For a gas grill, preheat one side to medium-high heat.
- In a large pot, bring salted water to a boil. Cook the green beans in the boiling water until they are tender, this usually takes about 2 to 3 minutes. Transfer the green beans to a bowl of ice water to cool down, then pat them dry with a kitchen towel.
- Place the green beans in a grill basket and position it over the indirect heat to give them a slight char, which should take around 5 minutes. Keep the grill uncovered during this process. Once they have developed the desired char, transfer the green beans to a serving dish.
- In a medium bowl, combine lemon juice, minced garlic, mustard, and oregano. Slowly add olive oil while whisking continuously, then season with salt and pepper.
- Drizzle the oregano vinaigrette over the warm green beans, then top with crumbled feta cheese and sliced almonds. Serve the dish warm or at room temperature.
