Charred green bean salad

Ingredients:

  • Kosher salt and freshly cracked black pepper
  • 450g green beans, end trimmed
  • Juice and zest of 1 lemon
  • 1 clove garlic, grated
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh oregano, finely chopped
  • 1/3 cup olive oil
  • 1/3 cup crumbled feta
  • 1/4 cup sliced toasted almonds

Instructions:

  1. Prepare a grill for indirect grilling. If you are using a charcoal grill, arrange the hot coals on one side only. For a gas grill, preheat one side to medium-high heat.
  2. In a large pot, bring salted water to a boil. Cook the green beans in the boiling water until they are tender, this usually takes about 2 to 3 minutes. Transfer the green beans to a bowl of ice water to cool down, then pat them dry with a kitchen towel.
  3. Place the green beans in a grill basket and position it over the indirect heat to give them a slight char, which should take around 5 minutes. Keep the grill uncovered during this process. Once they have developed the desired char, transfer the green beans to a serving dish.
  4. In a medium bowl, combine lemon juice, minced garlic, mustard, and oregano. Slowly add olive oil while whisking continuously, then season with salt and pepper.
  5. Drizzle the oregano vinaigrette over the warm green beans, then top with crumbled feta cheese and sliced almonds. Serve the dish warm or at room temperature.
