Charred corn & feta salad

Savor the smoky flavors of charred corn paired with creamy feta in this vibrant salad bursting with freshness and zesty undertones. An irresistible blend of textures and tastes!

Ingredients:

  • 1 small red onion (about 100g), thinly sliced
  • 400g sweetcorn (or 2-3 corn cobs, kernels stripped off)
  • drizzle of rapeseed oil (or another neutral oil), for frying
  • 2 tsp butter
  • 20g chives, finely sliced
  • 80g parsley, chopped
  • 200g feta, broken into chunks (ensure vegetarian, if needed)
  • 2 tbsp olive oil
  • ½ lemon, juiced

Instructions:

  1. Place the onion in a bowl, add water and let it soak for 5 minutes. Afterward, discard the water, rinse the onion, and place it on a paper towel to dry.
  2. Saute the corn in a non-stick pan over medium-high heat for about 4 minutes, stirring occasionally until it browns slightly. Drizzle some oil and butter over the corn, stir well to coat, and continue cooking for a few more minutes until the kernels are evenly browned. Take the pan off the heat and allow the corn to cool down.
  3. After the corn has cooled down, combine it with the onions, chives, parsley, and feta in a bowl. Drizzle olive oil and lemon juice over the mixture, then season with freshly ground black pepper. Taste for salt, but go easy as feta adds saltiness.
