Charred corn and lime salad

Ingredients:
- 2 large ears of corn
- 1 lime, zested and juiced
- 1 tablespoon melted butter or olive oil
- 1/2 cup chopped cilantro
- 1/3 cup chopped mint
- 1/2 teaspoon sweet smoked paprika
- 2 cups spinach leaves
- 60g queso fresco or feta cheese
Instructions:
- Peel off the husks from both corn cobs. Place the corn cobs on a gas burner set to medium heat. Cook while rotating the corn with tongs until all sides are slightly charred.
- Take a single corn cob and stand it upright inside a large bowl. Slice off the kernels from top to bottom. Use the back of the knife to scrape off any remaining corn bits and juices. Repeat this process for the second corn cob.
- Combine lime zest, lime juice, melted butter (or olive oil), chopped cilantro & mint, and paprika with the corn. Mix well to ensure even coating.
- Introduce the spinach into the bowl. Mix everything using your hands and then sprinkle the cheese on top.
- Enjoy right away or refrigerate until ready to serve.
