Charred caprese salad

Ingredients:
- 1 tablespoon dried Italian seasoning
- 1/2 teaspoon granulated garlic
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- One 16-ounce log uncut fresh mozzarella
- 2 tablespoons store-bought balsamic glaze
- 1 tablespoon extra-virgin olive oil, plus more for oiling grill grates
- 2 heirloom tomatoes, sliced 1/2-inch-thick
- 12 fresh basil leaves
- Sea salt, for sprinkling
Instructions:
- Heat up the grill until it's very hot.
- Mix the dried Italian herbs, granulated garlic, salt, and pepper on a plate. Coat the whole mozzarella log with about a tablespoon of balsamic glaze, then cover it with the dry seasonings. Put the cheese in the freezer to firm up, for around 20 to 30 minutes.
- Grease the grill grates, then place the mozzarella log on the grill to char quickly, for about 2 minutes. Rotate a quarter turn and repeat this process until all sides are charred but not melted, taking around 2 minutes for each side. Let it rest for a minute, then cut it into half-inch slices.
- Place the sliced tomatoes on a serving platter. Add the sliced charred mozzarella on top of the tomatoes, along with torn fresh basil, a drizzle of balsamic glaze, a sprinkle of sea salt, and a drizzle of olive oil.
