Charred broccoli salad

Ingredients:

  • 2 heads broccoli
  • Olive oil
  • Kosher salt and freshly cracked black pepper
  • 1 cup buttermilk
  • 1/2 cup sour cream
  • 1/4 cup finely sliced scallions
  • 1/4 cup apple cider vinegar
  • 2 tablespoons finely chopped dill
  • 2 tablespoons light brown sugar
  • 1 tablespoon spicy brown mustard
  • Freshly grated nutmeg
  • 1/2 cup dried cherries
  • 1/2 cup roasted salted peanuts, whole or roughly chopped

Instructions:

  1. Prepare your grill by heating one side for indirect cooking. For charcoal grills, arrange the coals on one side only. If using a gas grill, heat up one side only.
  2. Cut off the lower part of the broccoli stems and discard them or store in the freezer for later use in soups. Cut the broccoli lengthwise into quarters to create large pieces. Place the broccoli pieces in a bowl, drizzle with olive oil, sprinkle with salt and pepper, and mix well to coat. Grill the broccoli over direct heat until charred on all sides, approximately 1 to 2 minutes per side. Move the broccoli to the indirect heat side of the grill, cover with the lid, and cook until tender, for about 2 to 3 minutes.
  3. In a bowl, combine buttermilk, sour cream, scallions, vinegar, dill, brown sugar, and mustard. Season the mixture with fresh nutmeg, salt, and pepper according to your taste. Transfer the grilled broccoli to a serving platter and drizzle with the prepared buttermilk dressing. Sprinkle dried cherries and peanuts on top. Time to serve!
