Charred bean and pea salad
Indulge in the divine flavors of charred beans and peas in this mouthwatering salad. A perfect blend of smoky, fresh, and vibrant tastes awaits!
Ingredients:
- dried chiles de árbol
- garlic cloves, smashed
- 1½" piece ginger, peeled, thinly sliced
- tsp. coarsely ground black pepper
- tsp. cumin seeds
- cup plus 2 Tbsp. extra-virgin olive oil
- Tbsp. fresh lime juice
- tsp. pure maple syrup
- lb. green beans, wax beans, sugar snap peas, and/or snow peas, trimmed
- Kosher salt
Instructions:
- Sautee chilies, garlic, ginger, black pepper, cumin seeds, and 1/3 cup of oil in a small saucepan over low heat, stirring occasionally, until the garlic turns golden and the oil becomes highly aromatic, for about 5 to 8 minutes. Take it off the heat and mix in lime juice and maple syrup; keep the dressing aside.
- In the meantime, preheat the broiler. Place beans and/or peas on a wire rack placed in a rimmed baking sheet and drizzle with the remaining 2 tablespoons of oil. Season with salt generously, toss to cover, and arrange the beans in a single layer. Broil without stirring until they are tender and have blistered all over, approximately 4 minutes. Allow them to cool down.
- Present the beans and peas on a serving dish and pour the set-aside dressing over them; add more salt to taste.
