Chargrilled courgette salad

Delight in the flavors of chargrilled courgettes, fresh greens, and zesty dressing in this vibrant and nutritious salad. Perfect for a light, refreshing meal.

Ingredients:

  • 3 medium green courgettes
  • 3 medium yellow courgettes
  • 1 teaspoon salt and pepper
  • 1/3 cup olive oil
  • 1 teaspoon red win vinegar
  • 1 teaspoon cumin
  • 2 teaspoons honey
  • 1 tablespoon pine nuts
  • 1 tablespoon fresh mint - chopped
  • 1 tablespoon fresh dill - chopped
  • 30g parmesan cheese - shaved

Instructions:

  1. Slice the zucchinis diagonally into thick pieces and transfer to a large bowl.
  2. Mix in a tablespoon of oil and half of the salt and pepper, toss the zucchinis until they are evenly covered.
  3. Preheat a grill pan until very hot and grill the zucchinis until slightly charred and tender, roughly 2 – 3 minutes per side.
  4. Transfer back to the bowl.
  5. Beat together the remaining oil, vinegar, cumin, honey, mint, dill, and sprinkle in a bit more salt and pepper.
  6. Drizzle the dressing over the zucchinis and let it cool down.
  7. Toast the pine nuts in a dry pan, and before presenting the salad, scatter the pine nuts and parmesan on top.
