Chard salad with garlic breadcrumbs and parmesan

Ingredients:
- 1 bunch Swiss chard
- 1 lemon
- 1/2 cup extra virgin olive oil
- Salt
- 1 1/2 cups fresh breadcrumbs
- 1 clove garlic, minced
- 3/4 cup grated Parmesan
Instructions:
- Rinse and pat dry the chard, then separate the stems from the leaves. Keep aside. Grate the outer part and squeeze out the juice from the lemon.
- In a small bowl, mix the lemon juice (aim for around 2 1/2 tablespoons), 1 teaspoon of lemon zest, and a couple of hefty pinches of salt. Gradually blend in 1/4 cup of olive oil. Set the mixture aside.
- Heat up the remaining 1/4 cup of olive oil in a sturdy small pan over medium heat. Add the breadcrumbs and cook, stirring constantly, until they turn crispy and golden brown (approximately 5 minutes). Take care not to let them burn! Introduce the minced garlic and let it cook for an additional minute, then remove from the heat.
- Detach the chard leaves from the stems. Finely chop the stems. Pile up a few leaves, roll them into a cylinder, and slice the cylinder into thin (1/8-inch) strips. Repeat this process until all the leaves are shredded. Place the chard stems and leaves in a large bowl and delicately mix in the Parmesan and roughly 2/3 of the lemon dressing. Taste and add more dressing if preferred. Finally, toss in the toasted breadcrumbs and serve promptly.
