Celtuce & peppercorn salad (stem lettuce)

Ingredients:
- 1 piece Celtuce (Chinese stem lettuce)
- 3 teaspoons Chinkiang black vinegar
- 1/4 teaspoon granulated sugar
- 1/2 teaspoon Chinese sesame oil
- 3 teaspoons vegetable oil
- 1 clove of garlic
- 1 piece of fresh ginger, equal in size to the garlic clove
- 1/4 teaspoon salt
- 10 pieces whole Sichuan peppercorns
- 1 sprig spring onion (2 if using the very thin, Chinese variety)
Instructions:
- Prepare your celtuce by cleaning it thoroughly and removing the top leafy part and the dry base. Use a vegetable peeler to remove the skin, making sure to shave off any tough parts near the base. Cut the celtuce into thin, 3mm-wide strips by slicing diagonally with a sharp knife. Alternatively, you can use a vegetable grater with a julienne attachment. Place the sliced celtuce in a bowl, add salt, and mix well.,Mix vinegar, sugar, and sesame oil in a bowl and set aside.,Mince the garlic and ginger finely. Heat vegetable oil in a small saucepan or frying pan. Add the minced garlic, ginger, and peppercorns once the oil is hot. Tilt the pan to evenly cook the ingredients in the oil for about 30 seconds without browning them. Remove from heat and pour the mixture into the vinegar bowl.,Pour the warm dressing over the celtuce, mix well, and transfer to a serving dish.
