Celery on celery salad

A zesty and refreshing Celery on Celery Salad that bursts with flavors of crunchiness and freshness. Perfect for summer gatherings and quick meals.

Ingredients:

  • 1/3 cup olive oil
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons fresh lemon juice
  • Kosher salt, freshly ground pepper
  • 1/2 cup chopped fresh parsley
  • 1/4 cup capers
  • 1/2 medium celery root (celeriac), peeled, thinly sliced on a mandoline
  • 5 celery stalks, thinly sliced into long ribbons on a mandoline

Instructions:

  1. Combine oil, grated lemon peel, and squeezed lemon liquid in a big bowl; add salt and pepper for taste. Mix in parsley and capers.
  2. Put in celery root and celery into the mixture; mix well. Allow it to sit for 5 minutes before serving.
