Cauliflower wings & zesty lentil salad

Ingredients:
- 75g plain flour
- 1 tbsp paprika
- 200g low-fat natural yogurt
- 265g cauliflower florets
- 25-50ml hot sauce (depending on how much heat you prefer)
- 2 tsp honey
- 1 lime, zested and juiced
- 150g salad leaves
- 250g lentils, cooked
Instructions:
- Preheat the oven to 220C/200C fan/gas 7. Grease and line a baking sheet with non-stick baking paper. Combine the flour, paprika, and a generous pinch of salt in a bowl. Gradually whisk in the yogurt and 50ml water until a smooth batter forms. Coat the cauliflower florets with the batter and arrange them evenly on the baking sheet.
- Bake for 20-25 minutes, tossing halfway through, until the cauliflower is crispy and golden. Heat up the hot sauce and 1 tsp of honey in a saucepan. Coat the cauliflower with the sauce, return them to the tray, and bake for another 5-8 minutes.
- In a large bowl, mix together most of the lime zest, lime juice, remaining 1 tsp honey, and 1 tbsp olive oil. Add the salad leaves and lentils to the bowl and toss well. Divide the salad between two plates and garnish with the cauliflower wings. Sprinkle with the remaining lime zest, if desired.
