Cauliflower, white bean, and feta salad

Ingredients:
- /3 cup olive oil
- teaspoon minced fresh rosemary
- tablespoons fresh lemon juice
- tablespoon red wine vinegar
- 1/2 teaspoons finely grated lemon peel
- 1/2 teaspoons salt
- /2 teaspoon ground black pepper
- medium head of cauliflower, trimmed, cut into small florets (about 3 cups)
- (15-ounce) can white beans (such as Great Northern or navy beans), drained
- large heads of Belgian endive, trimmed, halved lengthwise, then thinly sliced crosswise
- tablespoon chopped fresh chives
- teaspoons chopped fresh parsley
- /2 cup crumbled feta cheese (about 90g)
Instructions:
- Heat oil and rosemary in a small saucepan over medium heat until fragrant, for about 1 minute. Allow it to cool.
- In a small bowl, mix lemon juice, vinegar, lemon zest, salt, and pepper using a whisk.
- In a medium bowl, toss cauliflower, beans, endive, chives, parsley, and rosemary-infused oil. Then, add cheese. Pour in the lemon juice mixture, toss to cover the salad. Season with salt and pepper.
