Cauliflower, white bean, and feta salad

Ingredients:

  • /3 cup olive oil
  • teaspoon minced fresh rosemary
  • tablespoons fresh lemon juice
  • tablespoon red wine vinegar
  • 1/2 teaspoons finely grated lemon peel
  • 1/2 teaspoons salt
  • /2 teaspoon ground black pepper
  • medium head of cauliflower, trimmed, cut into small florets (about 3 cups)
  • (15-ounce) can white beans (such as Great Northern or navy beans), drained
  • large heads of Belgian endive, trimmed, halved lengthwise, then thinly sliced crosswise
  • tablespoon chopped fresh chives
  • teaspoons chopped fresh parsley
  • /2 cup crumbled feta cheese (about 90g)

Instructions:

  1. Heat oil and rosemary in a small saucepan over medium heat until fragrant, for about 1 minute. Allow it to cool.
  2. In a small bowl, mix lemon juice, vinegar, lemon zest, salt, and pepper using a whisk.
  3. In a medium bowl, toss cauliflower, beans, endive, chives, parsley, and rosemary-infused oil. Then, add cheese. Pour in the lemon juice mixture, toss to cover the salad. Season with salt and pepper.
