Catchall lunch salad

Indulge in a delightful Catchall lunch salad bursting with fresh flavors and textures, perfect for a satisfying and healthy meal.

Ingredients:

  • 1 ½ cups sliced romaine or leaf lettuce
  • ¾ cup rinsed canned chickpeas
  • ½ (140g) can light tuna, drained
  • ½ cup thinly sliced red cabbage or coleslaw mix
  • ½ cup cherry tomatoes, halved
  • 2 scallions, sliced
  • 1/4 cup Easy Anchovy Vinaigrette (see Associated Recipe)

Instructions:

  1. Mix together lettuce, chickpeas, canned tuna, shredded cabbage or coleslaw mix, tomatoes, and chopped scallions in a medium-sized bowl or food-storage container. Right before serving, pour vinaigrette over the salad and gently mix to evenly coat all ingredients.
