Carrot salad with feta + nigella seeds

Enjoy a delightful carrot salad with the creamy goodness of feta cheese and a sprinkle of aromatic nigella seeds. A burst of flavors in every bite!

Ingredients:

  • 6-10 carrots, peeled
  • 4 tablespoons good quality olive oil
  • 2 tablespoons lemon juice (about 1/2 a lemon)
  • 4 cloves garlic, peeled and ground to a paste
  • 1 teaspoon nigella seeds
  • 2 tablespoons chopped parsley
  • 1/3 cup feta, crumbled

Instructions:

  1. Peel the carrots and chop them into your preferred size and shape (thin sticks, coins, or any other).
  2. In a pot, bring salted water to a boil (ensure there is enough water to cover the carrots by 1 inch).
  3. Boil the carrots in the water for 3-4 minutes, or until they can be easily pierced with a fork but are still firm (the cooking time may vary based on the size of your cuts).
  4. Drain the cooked carrots and allow them to cool.
  5. Crush the garlic in a mortar and pestle until it forms a thick paste (you can add a bit of salt to help with this process).
  6. Transfer the carrots to a serving dish, drizzle with lemon juice, a few splashes of olive oil, crushed garlic, and nigella seeds.
  7. Mix everything together well, sprinkle chopped parsley and crumbled feta on top.
