Carrot salad with feta + nigella seeds

Ingredients:
- 6-10 carrots, peeled
- 4 tablespoons good quality olive oil
- 2 tablespoons lemon juice (about 1/2 a lemon)
- 4 cloves garlic, peeled and ground to a paste
- 1 teaspoon nigella seeds
- 2 tablespoons chopped parsley
- 1/3 cup feta, crumbled
Instructions:
- Peel the carrots and chop them into your preferred size and shape (thin sticks, coins, or any other).
- In a pot, bring salted water to a boil (ensure there is enough water to cover the carrots by 1 inch).
- Boil the carrots in the water for 3-4 minutes, or until they can be easily pierced with a fork but are still firm (the cooking time may vary based on the size of your cuts).
- Drain the cooked carrots and allow them to cool.
- Crush the garlic in a mortar and pestle until it forms a thick paste (you can add a bit of salt to help with this process).
- Transfer the carrots to a serving dish, drizzle with lemon juice, a few splashes of olive oil, crushed garlic, and nigella seeds.
- Mix everything together well, sprinkle chopped parsley and crumbled feta on top.
