Carrot and chickpea salad

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 tablespoon whole cumin seed
  • salt and pepper to taste
  • crumbled feta or ricotta salata cheese for topping (optional)

Instructions:

  1. Mix together carrots to cumin seed in a big bowl, blend well.
  2. Add salt and pepper according to your preference, sprinkle with crumbled cheese if preferred, and enjoy right away.
