Caribbean-style sliced salad

Ingredients:
- 1/3 cup extra-virgin olive oil
- 3 medium red onions, finely chopped (2 cups)
- Salt
- 10 garlic cloves, minced
- One 2-inch piece fresh ginger, peeled and minced
- 2 tablespoons ground turmeric
- 450g carrots, quartered lengthwise and cut into 1 1/2-inch lengths
- 2270g green cabbage, cored and cut into 3/4-inch pieces
Instructions:
- Heat the olive oil in a large enameled cast-iron casserole. Put in the onions and a good amount of salt. Cook and stir occasionally over medium heat until the onions become soft, approximately 8 minutes. Mix in the garlic, ginger, and turmeric. Cook and stir until the veggies are aromatic and slightly browned, taking about 5 minutes.
- Combine carrots with 1/2 cup of water in the casserole. Cook over medium heat while stirring until the carrots begin to get tender, about 7 minutes. Gradually add the cabbage in large portions, allowing each to slightly wilt before adding more. Once all the cabbage is in, cover and cook on low heat, stirring occasionally, until the cabbage is soft, for about 40 to 45 minutes. Season with salt and serve.
