Cardamom citrus salad with a crunch!

Indulge in the vibrant flavors of cardamom and zesty citrus in this refreshing salad, complete with a satisfying crunch. Perfect for a light and flavorful meal.

Ingredients:

  • 1 pink grapefruit
  • 1 navel orange
  • 2 blood oranges
  • 1/4 cup honey
  • 1/2 tablespoon ground cardamom
  • 1/8 teaspoon ground cloves
  • 1 pinch sea salt
  • 1/4 cup pistachios, chopped

Instructions:

  1. Peel off the skin of the grapefruit and oranges. Gently slice them into sections, place in a container & keep any juice obtained during this procedure.
  2. Transfer the saved juice into a small pot. Include the honey, cardamom, cloves and salt.
  3. Bring the honey mixture to a boil and then lower the heat to a gentle simmer. Let it simmer for 10 minutes.
  4. Once 10 minutes have passed, turn off the stove and allow the honey mixture to cool down to room temperature.
  5. Arrange the fruit sections into individual serving bowls and drizzle the honey mixture on top.
  6. Refrigerate the bowls for a minimum of 10 minutes before serving. Extending the refrigeration time is even more beneficial!
  7. While the bowls are chilling, lightly toast the chopped pistachios in a dry pan over medium heat until they emit a pleasant aroma. Remove the pan from the heat and transfer the pistachios to a bowl to stop further cooking.
  8. Sprinkle the toasted pistachios on top of the bowls just before serving and savor the dish!
