Cara cara orange & burrata salad

Indulge in the refreshing blend of sweet cara cara oranges and creamy burrata in this vibrant and zesty salad. Perfect for a burst of citrus flavor.

Ingredients:

  • 4 Cara Cara oranges (see Tip)
  • 2 tablespoons pomegranate juice
  • 2 teaspoons honey
  • 2 teaspoons lime juice
  • 2 teaspoons rice vinegar
  • 2 teaspoons minced shallot
  • 2 teaspoons finely chopped fresh tarragon, plus leaves for garnish
  • ½ teaspoon whole-grain mustard
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 2 tablespoons extra-virgin olive oil
  • 5 cups red-leaf Boston or Bibb lettuce
  • 110g burrata cheese
  • 2 tablespoons pomegranate arils (seeds)
  • Crushed toasted hazelnuts for garnish

Instructions:

  1. Start by using a sharp knife to trim both ends of the oranges and remove the peels and white pith, then discard them. Proceed to slice the oranges into slices that are 1/4-inch thick.
  2. In a large bowl, combine pomegranate juice, honey, lime juice, vinegar, shallot, tarragon, mustard, salt, and pepper. Gradually mix in the oil. Set aside 3 tablespoons of the prepared dressing. Coat the lettuce with the remaining dressing in the bowl.
  3. On a platter, layer the lettuce and orange slices. Tear the burrata cheese and sprinkle it along with pomegranate arils on top. Drizzle the reserved 3 tablespoons of dressing over the salad and garnish with hazelnuts and tarragon leaves, if desired.
