Caprese salad

Ingredients:

  • 3 medium vine-ripe tomatoes, cut into 1/4-inch slices
  • 340g fresh mozzarella or burrata cheese, cut into slices
  • Olive oil, for drizzling
  • Good-quality balsamic vinegar, for drizzling 
  • Bunch fresh basil leaves, for topping
  • Kosher salt and freshly ground black pepper

Instructions:

  1. Arrange the tomato and mozzarella slices in a circular pattern on a serving dish, alternating between them. Drizzle with olive oil and balsamic vinegar. Rip up some basil leaves and scatter on top. Add salt and pepper to taste.
