Caprese salad

Delicious Caprese salad recipe with ripe tomatoes, fresh mozzarella, fragrant basil, drizzled with balsamic glaze. A perfect combination of flavors.

Ingredients:

  • 4 large, ripe tomatoes
  • 3 balls of fresh buffalo mozzarella
  • 1/4 cup extra-virgin olive oil, plus extra for drizzling
  • Generous pinch of salt
  • Handful of fresh oregano or basil leaves, torn if large

Instructions:

  1. Cut the tomatoes into slices that are about 1/3 inch thick and put them in a bowl with the salt and olive oil. Let them sit to soak up the flavors for at least 20 minutes and up to an hour. (If you're short on time, you can skip this part and just top the mozzarella and tomatoes with olive oil, salt, and pepper.)
  2. Separate the tomatoes, pouring the liquid into a small jar. Shake it well to make a mixture.
  3. Slice the mozzarella to match the thickness of the tomatoes and arrange a layer of tomato slices, alternating with mozzarella slices, on a serving plate. Drizzle the tomato mixture over them, sprinkle the fresh herbs, finish off with a generous pour of extra-virgin olive oil, and present.
