Caprese pasta salad
Indulge in the refreshing flavors of Caprese pasta salad. This dish combines al dente pasta with juicy tomatoes, fresh basil, creamy mozzarella, and a drizzle of balsamic glaze for a delightful culinary experience.
Ingredients:
- 230g whole-wheat or brown rice rotini or fusilli
- ¼ cup lemon juice
- ¼ cup extra-virgin olive oil
- 2 tablespoons red-wine vinegar
- 1 teaspoon finely chopped garlic
- 1 teaspoon honey
- ¾ teaspoon salt
- ½ teaspoon ground pepper
- 1 ¼ cups cherry tomatoes, halved
- 110g mozzarella pearls
- 3 tablespoons thinly sliced fresh basil, plus small leaves for garnish
Instructions:
- Start by heating a large amount of water until it boils. Submerge the pasta and follow the cooking instructions on the package. Once done, drain the pasta and rinse it under cold water.
- Combine lemon juice, oil, vinegar, minced garlic, honey, salt, and pepper in a spacious bowl. Carefully mix in the tomatoes, mozzarella, and the cooked pasta. You may serve it at room temperature or store it covered in the fridge for a maximum of 3 days. Just before serving, add the sliced basil and use basil leaves as a garnish, if preferred.
