Caprese pasta salad

Indulge in the refreshing flavors of Caprese pasta salad. This dish combines al dente pasta with juicy tomatoes, fresh basil, creamy mozzarella, and a drizzle of balsamic glaze for a delightful culinary experience.

Ingredients:

  • 230g whole-wheat or brown rice rotini or fusilli
  • ¼ cup lemon juice
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red-wine vinegar
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon honey
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 ¼ cups cherry tomatoes, halved
  • 110g mozzarella pearls
  • 3 tablespoons thinly sliced fresh basil, plus small leaves for garnish

Instructions:

  1. Start by heating a large amount of water until it boils. Submerge the pasta and follow the cooking instructions on the package. Once done, drain the pasta and rinse it under cold water.
  2. Combine lemon juice, oil, vinegar, minced garlic, honey, salt, and pepper in a spacious bowl. Carefully mix in the tomatoes, mozzarella, and the cooked pasta. You may serve it at room temperature or store it covered in the fridge for a maximum of 3 days. Just before serving, add the sliced basil and use basil leaves as a garnish, if preferred.
