Cantaloupe and radicchio salad

Ingredients:

  • 1/3 cup balsamic vinegar
  • 1/4 cup pine nuts 
  • 1/4 cup olive oil 
  • Kosher salt and freshly ground black pepper 
  • 1 small cantaloupe, cut into 1-inch pieces 
  • 1/2 head radicchio, cored and cut into 1-inch pieces 
  • 1/3 cup torn fresh mint leaves 

Instructions:

  1. Simmer the vinegar in a small saucepan on medium-high heat until it reduces by half, approximately 3 minutes. Allow it to cool slightly.
  2. Brown the pine nuts in a small, dry skillet over medium heat, stirring frequently, until they turn golden, for about 3 minutes.
  3. Combine the reduced vinegar, olive oil, 1/4 teaspoon of salt, and some pepper by whisking together.
  4. Mix the cantaloupe, radicchio, mint, and toasted pine nuts in a broad, flat bowl. Pour the vinaigrette over the mixture. Give it a final toss just before serving.
