Cantaloupe and cucumber salad
Delight in the refreshing flavors of cantaloupe and cucumber in a perfect balance of sweetness and crispness. Ideal for a summer meal.
Ingredients:
- 1 tablespoon white balsamic vinegar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- ½ large cantaloupe, cubed (1 1/2 cups) (see Tip)
- ½ large cucumber, halved lengthwise and sliced (1 1/2 cups) (see Tip)
- 3 tablespoons crumbled feta cheese
- 1 tablespoon snipped fresh basil
- 1 tablespoon snipped fresh mint
Instructions:
- For the Balsamic Vinaigrette, mix white balsamic vinegar, salt, and black pepper in a small bowl. Add olive oil and whisk until well combined. Keep it aside.
- For the Cantaloupe and Cucumber Salad: Combine cantaloupe, cucumber, feta cheese, basil, and mint in a large bowl and gently mix them together.
- Pour the vinaigrette over the cantaloupe mixture. Gently mix and then serve right away.
