California cobb salad

Indulge in the flavors of a California Cobb Salad - a vibrant and nutritious dish bursting with fresh ingredients like avocado, bacon, and blue cheese. Perfect for a light yet satisfying meal!

Ingredients:

  • 2/3 cup sour cream
  • 1/2 cup mayonnaise 
  • 2 tablespoons lemon juice (from about 1 lemon) 
  • 1 tablespoon Dijon mustard 
  • 1 teaspoon honey 
  • 1 teaspoon Worcestershire sauce 
  • 1 clove garlic, smashed 
  • Kosher salt and freshly ground black pepper
  • 3/4 cup crumbled blue cheese (about 140g)
  • 2 tablespoons finely chopped fresh chives 
  • 4 cups roughly chopped romaine heart (from 1 heart)
  • 3/4 cup cooked red quinoa 
  • 1/2 cup cooked bacon cut into 1-inch pieces (from about 5 slices) 
  • 2 hard-boiled eggs, quartered 
  • 1 cup small heirloom cherry tomatoes (about 230g) 
  • 1 small avocado, scooped out and cut into 1-inch chunks 
  • 1 small watermelon radish, thinly sliced and then quartered 

Instructions:

  1. To make the blue cheese dressing: Mix together the sour cream, mayonnaise, lemon juice, Dijon mustard, honey, Worcestershire sauce, minced garlic, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and 1/4 cup of crumbled blue cheese in a food processor. Blend until the mixture is smooth. Add the chives and the remaining 1/2 cup of blue cheese. Adjust the salt and pepper according to your taste. Keep the dressing in the fridge until you're ready to use it.
  2. To prepare the salad: Combine the romaine lettuce and quinoa in a serving bowl. Add 2 tablespoons of the dressing and toss all the ingredients together. Place the bacon, boiled eggs, tomatoes, avocados, and sliced radishes on top of the lettuce in separate sections. Drizzle more dressing over the salad and serve immediately.
