Calamari, tomato and caper salad

Ingredients:
- 3 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- 5 Roma tomatoes, chopped
- 1/2 teaspoon red pepper flakes
- Kosher salt and freshly ground black pepper
- 450g calamari, cleaned, sliced into 1/4 to 1/2-inch slices
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons capers, rinsed and drained
- 1 lemon, zested
- Kosher salt and freshly ground black pepper
- 2 tablespoons chopped fresh flat-leaf parsley
Instructions:
- To prepare the salad: Heat the oil in a large skillet over medium-high heat. Cook the garlic until it becomes fragrant, for around 30 seconds. Then, add the tomatoes and red pepper flakes and cook for 2 minutes. Season the calamari with salt and pepper, then add it to the skillet. Cook while stirring frequently until it is fully cooked, which should take about 2 to 3 minutes. Strain the mixture using a colander.
- To make the dressing: Combine lemon juice, oil, capers, and lemon zest in a small bowl. Whisk the ingredients together until they form a smooth mixture. Season with salt and pepper according to your preference.
- Transfer the cooked calamari mixture to a serving bowl. Pour the dressing over it and gently mix until everything is well coated. Sprinkle chopped parsley on top as a garnish before serving.
