Calamari, tomato and caper salad

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 5 Roma tomatoes, chopped
  • 1/2 teaspoon red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 450g calamari, cleaned, sliced into 1/4 to 1/2-inch slices
  • 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons capers, rinsed and drained
  • 1 lemon, zested
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons chopped fresh flat-leaf parsley

Instructions:

  1. To prepare the salad: Heat the oil in a large skillet over medium-high heat. Cook the garlic until it becomes fragrant, for around 30 seconds. Then, add the tomatoes and red pepper flakes and cook for 2 minutes. Season the calamari with salt and pepper, then add it to the skillet. Cook while stirring frequently until it is fully cooked, which should take about 2 to 3 minutes. Strain the mixture using a colander.
  2. To make the dressing: Combine lemon juice, oil, capers, and lemon zest in a small bowl. Whisk the ingredients together until they form a smooth mixture. Season with salt and pepper according to your preference.
  3. Transfer the cooked calamari mixture to a serving bowl. Pour the dressing over it and gently mix until everything is well coated. Sprinkle chopped parsley on top as a garnish before serving.
