Calamari salad

Ingredients:
- 1 lemon, juiced
- Salt
- 16 cleaned squid, cut into rings
- 1/2 cup chopped white onion
- 1/2 cup chopped celery
- 3 cloves garlic
- 2 tablespoons Italian parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- Pinch thyme
- Pinch basil
- Pinch oregano
Instructions:
- In a big pot with boiling water, mix in lemon juice and salt. Put in squid rings and cook for approximately 1 1/2 to 2 minutes. Remove the water.Mix onion, celery, garlic, parsley, olive oil, vinegar, and spices with the cooked squid and serve either at room temperature or chilled.
