Caesar salad with grilled steak

Ingredients:
- ¼ cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon anchovy paste
- 1 small clove garlic, grated
- ½ teaspoon ground pepper, divided
- 2 tablespoons grated Parmesan cheese
- 450g flank or sirloin steak (about 1 1/4 inches thick), trimmed
- ¼ teaspoon salt plus a pinch, divided
- 1 large tomato, chopped
- ½ cup thinly sliced red onion
- 1 large head romaine lettuce, cut lengthwise into quarters
- Lemon wedges for serving
Instructions:
- Heat up the grill to medium heat.
- Combine mayonnaise, lemon juice, oil, mustard, anchovy paste, minced garlic, and a pinch of pepper in a small bowl. Mix in Parmesan cheese. Keep aside.
- Season both sides of the steak with a pinch of salt and the rest of the pepper.
- Grease the grill rack. Cook the steak, turning it over once, until a meat thermometer reads 125°F for medium-rare, approximately 10 minutes. Transfer the steak to a cutting board and let it sit for 5 minutes before slicing it thinly.
- At the same time, mix diced tomato, sliced onion, and a pinch of salt in a medium bowl. Place romaine lettuce on a serving platter and arrange the tomato mixture and sliced steak on top. Drizzle with the prepared dressing and serve with lemon wedges, if preferred.
