Caesar salad with "crusty" croutons

Indulge in the classic flavors of Caesar salad with crunchy, golden croutons. A perfect blend of crisp romaine, tangy dressing, and savory toppings.

Ingredients:

  • 1/2 cup garlic-flavored olive oil, divided, plus more as needed
  • 1/2 cup grated Parmesan, divided, plus more as desired
  • 110g frozen pizza crust, thawed
  • 1/2 lemon, juiced
  • 1 medium head romaine, chopped, rinsed, and dried
  • Kosher salt and freshly ground black pepper

Instructions:

  1. Heat 1/4 cup of oil in a medium skillet over medium-high heat until it's hot but not smoking. Take 1/4 cup of cheese and put it in a medium bowl, then set it aside.
  2. Spread a work surface with a bit of oil and flatten the dough into a rectangle around 1/4-inch thick. Slice the dough into slim strips, approximately 1/4-inch wide. Once the oil is hot, carefully hold the dough strips with kitchen scissors, 2 strips at a time, above the pan and trim off 1/4-inch pieces, letting them gently drop into the hot oil (you may need to do this in multiple batches). Cook the dough pieces in shallow oil, tossing them frequently with either a slotted spoon, Chinese strainer, or tongs, until they turn golden brown, for about 3 to 4 minutes. Move the croutons into the bowl with the cheese and mix them to coat. Keep frying and coating the dough with the cheese until you have used up all the dough.
  3. When you're set to serve, place the romaine lettuce in a large bowl, sprinkle lemon juice over it, and pour the remaining 1/4 cup of oil. Season with salt and pepper to your liking, and mix thoroughly to evenly cover the lettuce. Add the remaining 1/4 cup of cheese and the croutons, and mix well until everything is combined.
  4. Put everything on a serving platter and sprinkle extra cheese on top, if desired.
