Caesar salad taco bites

Indulge in the delicious fusion of Caesar salad and Mexican tacos with these flavorful and appetizing bites. Perfect for a tasty and satisfying treat.

Ingredients:

  • 1/4 cup mayonnaise
  • 1/4 teaspoon Worcestershire sauce 
  • 1 clove garlic, minced 
  • 1 tablespoon lemon juice (1/2 lemon) 
  • 1/2 teaspoon anchovy paste or 1 anchovy, minced 
  • 1/4 teaspoon salt 
  • 2 tablespoons plus 1 cup freshly grated Parmesan
  • 5 cups finely shredded romaine lettuce (2 romaine hearts) 
  • Nonstick cooking spray, for skillet
  • 36 tortilla chip scoops 

Instructions:

  1. Combine mayonnaise, Worcestershire sauce, minced garlic, freshly squeezed lemon juice, anchovy paste, salt, and 2 tablespoons of Parmesan cheese in a big bowl. Mix in the lettuce and toss thoroughly to ensure everything is coated evenly.
  2. In a medium skillet, heat over medium heat and apply nonstick spray. Sprinkle 1/4 cup of the Parmesan cheese evenly on the skillet. Cook until the cheese is bubbly and starts to turn golden brown, which usually takes about 3 to 4 minutes. Remove the skillet from the heat, let it sit for 1 minute, then flip the cheese onto a baking sheet lined with parchment paper, using an offset spatula to assist you. Allow it to cool down completely. Repeat this step with the remaining Parmesan. Once all the frico has cooled down entirely, break it into small, bite-sized pieces.
  3. Fill each tortilla cup with a spoonful of salad. Top it with a piece of the cooled frico and serve.
