Caesar salad

Ingredients:
- 1 loaf Italian bread
- 3 tablespoons extra-virgin olive oil, plus 1/2 cup
- 1 garlic clove, minced, plus 3 cloves peeled
- 1/2 teaspoon dried oregano
- Salt and pepper
- 3 anchovy fillets
- 2 teaspoons Dijon mustard
- 1/2 lemon, juiced
- 2 tablespoons red wine vinegar
- 1 teaspoon Worcestershire sauce
- 2 romaine lettuce hearts, cut in 2-inch pieces
- 2 bunches watercress, trimmed
- 1 hard boiled egg
- 1 cup shredded Pecorino Romano
- 1/2 cup chopped parsley
- 450g cooked grilled chicken, sliced in strips (optional)
Instructions:
- Cut off the edges of the Italian loaf and then dice it into small pieces. Transfer the bread pieces into a bowl. Heat a small pan over medium heat, then add the oil, finely chopped garlic, and oregano. Cook for about 2 minutes to blend the flavors. Drizzle this seasoned oil over the bread cubes and mix well. Sprinkle salt and pepper over the bread, then spread them out in a single layer on a baking sheet. Bake in a preheated oven at 200 °C for approximately 10 minutes until the croutons are crisp yet slightly tender.
- Using a small food processor, blend the remaining garlic, anchovy, mustard, lemon juice, vinegar, Worcestershire sauce, salt, and pepper for half a minute until it forms a paste. Slowly add the olive oil and blend again until smooth. In a large salad bowl, mix the romaine lettuce and watercress. Grate a hard-boiled egg over the greens. Drizzle the dressing onto the salad and toss gently to coat the leaves. Add the cheese, croutons, parsley, and chicken, then toss everything together. Season with salt and pepper before serving immediately.
