Caesar salad

Ingredients:
- 1 tablespoon olive oil
- 1/2 teaspoon minced garlic
- 1 cup bread, cut in 1/2-inch cubes
- 3 hearts romaine lettuce
- 1/2 cup Caesar Dressing, recipe follows
- 1/2 cup shaved Parmesan
- 3 anchovy fillets, finely chopped
- 1 tablespoon finely chopped capers
- 1 tablespoon Dijon mustard
- 1 egg yolk
- 1 teaspoon minced garlic
- 3/4 cup vegetable oil
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1/4 cup heavy cream
- Kosher salt
Instructions:
- Heat olive oil in a large skillet over medium heat. Add minced garlic and bread cubes, stirring well to ensure they are coated with oil. Cook in the skillet for about 7 minutes until they turn golden brown.
- Rip the romaine hearts into small, bite-sized pieces. Mix them with the Caesar Dressing, ensuring all the leaves are well coated. Top with shaved Parmesan and the homemade garlic croutons.
- Combine anchovy fillets, capers, mustard, egg yolk, and minced garlic in a medium bowl. Gradually pour vegetable oil into the mixture while whisking vigorously. Add red wine vinegar and lemon juice, then fold in the heavy cream. Season with salt to your preference.
- Store leftovers in an airtight container in the fridge; they will stay fresh for a few days.
