Caesar salad

Ingredients:
- 1 egg yolk*
- 3 tablespoons fresh lemon juice
- 1 tablespoon minced garlic
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon red pepper flakes
- 1 tablespoon Dijon mustard
- 2 anchovy fillets, mashed
- Scant 1 cup vegetable oil
- 1/3 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- 1 large head romaine lettuce, cleaned and cut into 1 to 2-inch pieces
- Freshly grated Parmesan
- 2 cups croutons
Instructions:
- Combine the egg yolk, lemon juice, minced garlic, Worcestershire sauce, red pepper flakes, mustard, and anchovies in a medium bowl. Gradually add the oils while whisking to create an emulsion. Season with salt and pepper according to your taste preferences.Put the lettuce in a spacious bowl. Top it with grated Parmesan and freshly ground black pepper. Pour the preferred quantity of dressing over the lettuce and mix thoroughly. Finish by adding croutons on top.
