Caesar pasta salad

Ingredients:

  • 1/2 (16-ounce box) rotini pasta
  • 1/2 cup creamy Caesar salad dressing
  • 1 lemon, zested and juice
  • 3 tablespoons chopped parsley leaves
  • 1/4 cup grated Parmesan
  • Freshly ground black pepper
  • 1 cup garlic croutons

Instructions:

  1. Start by heating a large pot filled with salted water over medium heat until it boils. Carefully add the pasta and stir occasionally. Let it cook without a cover, stirring from time to time until it is cooked but still slightly firm when bitten, around 8 minutes. Turn off the heat. Drain the pasta thoroughly and rinse it under cold water.
  2. In a spacious bowl, mix together the Caesar dressing, grated lemon peel, lemon juice, chopped parsley, grated Parmesan cheese, and black pepper. Include the croutons and the pasta that has been cooked and cooled. Stir until all the pasta is evenly coated with the dressing. Move the mixture to a serving bowl and it's ready to be served. This pasta salad can be prepared a day in advance; simply set aside the croutons and combine them 15 minutes before serving.
