Caesar chicken salad

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons vegetable oil
  • 2 tablespoons white wine vinegar
  • 1 small clove garlic, peeled
  • 2 to 3 cups diced skinless, boneless cooked chicken cut into bite-sized pieces
  • 60g canned flat anchovy filets, drained
  • 2 scallions (green onions), trimmed, thinly sliced
  • 1 red bell pepper (170g) washed, seeded and cut into 1/2-inch dice
  • 4 to 6 leaves (110g) romaine lettuce, washed, torn into 3/4-inch pieces
  • 1-ounce chunk fresh Parmesan cheese
  • 1 to 1 1/2 cups store-bought or homemade garlic croutons (see below)
  • Salt and freshly ground black pepper

Instructions:

  1. Blend together the oils, vinegar, anchovies, and garlic until smooth. Season with salt and pepper to taste, then move the mixture to a bowl. Combine with chicken, scallions, and peppers, and let it marinate for as long as you can before serving.
  2. Before you serve, mix in the romaine lettuce, ensuring all ingredients are coated, and season with salt and pepper to taste.
  3. Allow each person to grate Parmesan over their salad and top with croutons.
