Caesar brussels salad

Indulge in the flavors of a classic Caesar - this brussels salad offers a delightful twist on the traditional taste. Perfectly balanced with crisp greens and zesty dressing.

Ingredients:

  • 2 large egg yolks
  • 2 tablespoons fresh lemon juice
  • 5 oil-packed anchovy fillets, drained
  • 3 tablespoons chopped parsley leaves, plus more leaves for garnish
  • 2 tablespoons chopped chives
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white wine vinegar
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup grapeseed oil
  • 910g brussels sprouts
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 garlic clove, finely grated
  • Kosher salt
  • Pepper
  • 1/2 cup freshly grated Parmigiano-Reggiano

Instructions:

  1. Prepare the dressing by combining egg yolks, lemon juice, anchovies, parsley, chives, mustard, and vinegar in a food processor. Blend until the mixture is smooth. While the machine is running, slowly pour in both types of oil until well combined. Place the dressing in a bowl, cover it with plastic wrap, and put it in the refrigerator. Clean the food processor afterwards.
  2. Cut the smallest brussels sprouts into thin slices to form 2 cups and place them in a large bowl. Use a food processor with a slicing attachment to shred the rest of the brussels sprouts. Add the shredded brussels sprouts to the bowl. Mix in olive oil, vinegar, garlic, salt, and pepper. Cover the bowl and let it sit for 1 hour. Add the Caesar dressing and cheese, then mix well. Finally, garnish with parsley before serving.
