Buttery cast-iron shrimp with winter salad

Ingredients:

  • 1/4 cup unsalted butter, at room temperature
  • 1 tablespoon honey
  • 1 chipotle in adobo with sauce, minced
  • Salt
  • Freshly ground black pepper
  • 910g raw large shrimp, peeled and deveined
  • 110g frisée, coarsely chopped (about 4 cups)
  • 110g radicchio and/or escarole, coarsely chopped (about 4 cups)
  • 1 endive, cored, leaves halved crosswise
  • 1 cup coarsely chopped parsley

Instructions:

  1. Combine the mixture of butter, honey, chipotle, and 1/2 teaspoon salt until it becomes a smooth consistency in a small bowl.
  2. Melt 1 tablespoon of the chipotle butter in a large cast-iron skillet. Season the shrimp with salt and pepper. Place half of the shrimp in the skillet and cook over medium-high heat until they turn opaque, flipping once, for approximately 4 minutes. Once done, move them to a plate. Repeat the process with 1 tablespoon of chipotle butter and the remaining shrimp.
  3. Using the same skillet, melt the rest of the chipotle butter. Combine frisée, radicchio, endive, and parsley in the skillet, and stir using tongs until the greens are slightly cooked, which should take around 1 to 2 minutes. Take the skillet off the heat, and arrange the shrimp on top of the greens along with any accumulated juices before serving.
