Butter lettuce, chicken, and cherry salad

Indulge in a delightful medley of butter lettuce, tender chicken, and juicy cherry tomatoes in this fresh and vibrant salad. Perfect blend of flavors and textures.

Ingredients:

  • 1/4 cup fresh lemon juice
  • 3 tablespoons Dijon mustard
  • 3 tablespoons chopped fresh dill
  • 2 tablespoons honey
  • 1 garlic clove, minced
  • 1/4 cup extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 4 Perfect Pan-Roasted Chicken Thighs, fat from pan reserved
  • 4 thick slices rustic bread, crusts removed, torn into 3/4" pieces
  • 450g fresh cherries, stemmed, pitted, and lightly crushed
  • 3 heads butter lettuce, cored and torn into pieces
  • 4 radishes, thinly sliced
  • 1 tablespoon chopped chives

Instructions:

  1. Combine the first 5 ingredients by whisking them together in a small bowl. Slowly incorporate the oil while whisking. Season with salt and pepper according to your preference. Mix well and set aside. Separate the crispy chicken skin and tear it into pieces. Remove the chicken meat from the bones, tear it into pieces, and discard the bones. Keep the skin and meat aside for later.
  2. In a large skillet, warm up the chicken fat over medium heat. Add the bread to the skillet and toast it, turning it regularly, until it turns golden and crunchy, which should take about 2 minutes. Use a slotted spoon to remove the toasted bread and let it drain on paper towels. Season it with salt and pepper while it's still hot.
  3. In a large bowl, combine the chicken meat with cherries, butter lettuce, radishes, and chives. Drizzle the vinaigrette over the mixture and toss everything together until evenly coated. Distribute the salad among plates and top with croutons and pieces of chicken skin for garnish.
