Bulgur salad (itch)

Versatile bulgur salad recipe (itch) bursting with flavors of fresh veggies, herbs, and zesty dressing. Perfect for a healthy and satisfying meal.

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1 large onion, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 tablespoon pepper sauce (can use sriracha or similar)
  • 1 tin chopped tomatoes (approx 410g)
  • 1 cup Bulgur Wheat
  • 1 teaspoon salt
  • 1/4 cup lemon juice (optional, if tomatoes are sour then don’t use)
  • 1 bunch parsley, finely chopped
  • 3 medium sized spring onions, chopped
  • 1 handful chopped parsley for serving

Instructions:

  1. Cook the diced onion in olive oil over low heat until it becomes see-through and tender.
  2. Mix in the cumin, tomato paste, and pepper sauce thoroughly.
  3. Introduce the canned tomatoes and salt, stir and allow it to simmer for approximately 3 minutes while continuing to stir.
  4. Taste the tomato sauce and include the lemon juice if necessary.
  5. Take off the heat and blend in the bulgur thoroughly.
  6. Put the lid on the pan and allow it to sit for 30 minutes to let the bulgur cook in the sauce.
  7. If the mixture appears too dry, you have the option to add 1/4 cup of boiling water.
  8. Uncover the pan and mix in the chopped parsley and spring onions.
  9. Enjoy hot or cold with an extra sprinkle of chopped parsley as a garnish.
