Bulgur salad (itch)
Versatile bulgur salad recipe (itch) bursting with flavors of fresh veggies, herbs, and zesty dressing. Perfect for a healthy and satisfying meal.
Ingredients:
- 1/4 cup extra virgin olive oil
- 1 large onion, chopped
- 1 tablespoon tomato paste
- 1 teaspoon cumin
- 1 tablespoon pepper sauce (can use sriracha or similar)
- 1 tin chopped tomatoes (approx 410g)
- 1 cup Bulgur Wheat
- 1 teaspoon salt
- 1/4 cup lemon juice (optional, if tomatoes are sour then don’t use)
- 1 bunch parsley, finely chopped
- 3 medium sized spring onions, chopped
- 1 handful chopped parsley for serving
Instructions:
- Cook the diced onion in olive oil over low heat until it becomes see-through and tender.
- Mix in the cumin, tomato paste, and pepper sauce thoroughly.
- Introduce the canned tomatoes and salt, stir and allow it to simmer for approximately 3 minutes while continuing to stir.
- Taste the tomato sauce and include the lemon juice if necessary.
- Take off the heat and blend in the bulgur thoroughly.
- Put the lid on the pan and allow it to sit for 30 minutes to let the bulgur cook in the sauce.
- If the mixture appears too dry, you have the option to add 1/4 cup of boiling water.
- Uncover the pan and mix in the chopped parsley and spring onions.
- Enjoy hot or cold with an extra sprinkle of chopped parsley as a garnish.
