Bulgur salad
Tantalize your taste buds with a vibrant bulgur salad bursting with fresh herbs, crisp veggies, and zesty vinaigrette. A delightful, nutritious treat!
Ingredients:
- 1/4 cup extra virgin olive oil
- 1 large onion, chopped
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 tablespoon hot pepper sauce
- 410 grams tin chopped tomatoes
- 1 cup Bulgur Wheat
- 1 teaspoon salt
- 1/4 cup lemon juice (optional, if tomatoes aren't very sweet then don’t use)
- 1 bunch parsley, finely chopped
- 3 medium sized spring onions/scallions chopped
- more chopped parsley for serving
Instructions:
- Cook the diced onion in olive oil over low heat until it becomes see-through and tender.
- Mix in the ground cumin, tomato paste, and hot pepper sauce thoroughly.
- Pour in the canned tomatoes and salt, stir, and allow it to simmer for approximately 3 minutes while stirring occasionally.
- Taste the tomato mixture and include the lemon juice if necessary.
- Take off the heat and blend in the bulgur well.
- Put a lid on the pan and let it sit for 30 minutes for the bulgur to absorb the sauce.
- If the mixture appears too dry, you may pour in 1/4 cup of boiling water.
- Uncover and mix in the chopped parsley and scallions.
- Enjoy either warm or cold with an extra sprinkle of chopped parsley on top.
