Bulgur salad

Tantalize your taste buds with a vibrant bulgur salad bursting with fresh herbs, crisp veggies, and zesty vinaigrette. A delightful, nutritious treat!

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 1 large onion, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 tablespoon hot pepper sauce
  • 410 grams tin chopped tomatoes
  • 1 cup Bulgur Wheat
  • 1 teaspoon salt
  • 1/4 cup lemon juice (optional, if tomatoes aren't very sweet then don’t use)
  • 1 bunch parsley, finely chopped
  • 3 medium sized spring onions/scallions chopped
  • more chopped parsley for serving

Instructions:

  1. Cook the diced onion in olive oil over low heat until it becomes see-through and tender.
  2. Mix in the ground cumin, tomato paste, and hot pepper sauce thoroughly.
  3. Pour in the canned tomatoes and salt, stir, and allow it to simmer for approximately 3 minutes while stirring occasionally.
  4. Taste the tomato mixture and include the lemon juice if necessary.
  5. Take off the heat and blend in the bulgur well.
  6. Put a lid on the pan and let it sit for 30 minutes for the bulgur to absorb the sauce.
  7. If the mixture appears too dry, you may pour in 1/4 cup of boiling water.
  8. Uncover and mix in the chopped parsley and scallions.
  9. Enjoy either warm or cold with an extra sprinkle of chopped parsley on top.
