Bulgur salad
Delight in flavors of fresh veggies, aromatic herbs, and wholesome bulgur in this vibrant salad. Experience a burst of Mediterranean taste in every bite.
Ingredients:
- 1 cup bulgur
- 1 cup boiling water
- 2 cucumbers, diced
- 1 (15oz.) can garbanzo beans, rinsed and drained
- 1/8 cup red onion, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup shelled pistachios
Instructions:
- Mix bulgur with hot water in a bowl and allow it to rest for 1 hour until it absorbs all the water.
- In a big bowl, combine cucumbers, chickpeas, red onion, parsley, mint, feta cheese and rehydrated bulgur. Gently mix.
- Sprinkle with chopped pistachios and enjoy.
