Bulgur salad

Delight in flavors of fresh veggies, aromatic herbs, and wholesome bulgur in this vibrant salad. Experience a burst of Mediterranean taste in every bite.

Ingredients:

  • 1 cup bulgur
  • 1 cup boiling water
  • 2 cucumbers, diced
  • 1 (15oz.) can garbanzo beans, rinsed and drained
  • 1/8 cup red onion, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup shelled pistachios

Instructions:

  1. Mix bulgur with hot water in a bowl and allow it to rest for 1 hour until it absorbs all the water.
  2. In a big bowl, combine cucumbers, chickpeas, red onion, parsley, mint, feta cheese and rehydrated bulgur. Gently mix.
  3. Sprinkle with chopped pistachios and enjoy.
