Bulgar wheat salad

Delicious bulgar wheat salad bursting with vibrant flavors like fresh vegetables, tangy dressing, and aromatic herbs. Perfect for a light and nutritious meal.

Ingredients:

  • 1 cup bulgur
  • 1 garlic clove
  • 2 tablespoons ginger, grated
  • 1 tablespoon Dijon
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup grape seed oil
  • 1 cucumber
  • 2 shallots
  • coriander
  • parsley
  • thyme
  • 12 Bresaola slices

Instructions:

  1. Bring water to a boil and add sufficient water to cover the bulgur wheat entirely. Cover the container and allow it to soak for approximately 45 minutes.
  2. Combine minced garlic, ginger, Tabasco sauce, mustard, vinegar, salt, black pepper, and oil in a blender. Keep it aside.
  3. Remove excess water from the bulgur wheat and mix in diced cucumber, shallots, herbs, and the prepared dressing. Chill in the refrigerator until you are prepared to serve.
  4. When ready to serve: Place Bresaola on a plate and spoon bulgur wheat salad alongside.
  5. If desired: Decorate with crumbled feta cheese and roasted red peppers (the ones packed in olive oil).
