Build your own pesto pasta salad
Discover how to make a delicious pesto pasta salad with fresh ingredients, bursting with flavor. Customize your salad with your favorite toppings!
Ingredients:
- 400g farfalle pasta
- 3 tbsp olive oil
- 50g pine nuts
- 5 tbsp pesto (see recipe, right and below, if you want to make your own)
- 10 large basil leaves
- ½ lemon, juiced and zested
- 50g parmesan or vegetarian alternative, shaved
- halved cherry tomatoes, drained sweetcorn, peas, rocket
Instructions:
- Prepare the pasta according to the package directions, then strain and mix with 1 tablespoon of the oil. Place in a spacious bowl and leave it aside to cool down, gently stirring occasionally to prevent sticking.
- Brown the pine nuts in a dry pan over low heat, stirring continuously for 4-5 minutes until they turn golden. Once the pasta has cooled down completely, combine it with the pesto, toasted pine nuts, rest of the olive oil, basil, lemon zest and juice, tomatoes, corn, peas, and arugula, if preferred. Season with salt and pepper, then sprinkle the parmesan on top before serving.
