Ingredients:
- 3 cups shredded rotisserie chicken
- ¾ cup chopped celery (from 3 small stalks)
- ½ cup thinly sliced scallions (from 3 scallions)
- ½ cup mayonnaise

- 1 teaspoon lemon zest plus 1 Tbsp. fresh juice (from 1 lemon)
- 1 teaspoon Dijon mustard
- ½ teaspoon black pepper
- 8 slider buns
- 8 butter lettuce leaves (from 1 head)
- 60g blue cheese, crumbled (about 1/2 cup)
Instructions:
- Combine chicken, celery, and scallions in a large bowl; leave aside.
