Buffalo chicken salad

Ingredients:

  • 1 boneless skinless chicken breast
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • Salt and pepper
  • 1/2 cup cayenne hot pepper sauce
  • 4 cups salad greens, such as romaine or mixed greens
  • Fast Blue Cheese Dressing, recipe follows
  • Blue cheese crumbles, for topping
  • Celery hearts with leaves intact, for serving
  • 1/2 cup mayonnaise
  • 1/4 cup whole milk
  • 1/4 cup sour cream
  • Dash of Worcestershire sauce
  • 1/3 cup blue cheese crumbles
  • Salt and pepper

Instructions:

  1. Using a sharp knife, carefully cut the chicken breast horizontally to create two equally-sized thinner pieces.
  2. In a small skillet, heat a mixture of butter and olive oil over medium-high heat. Season both sides of the chicken breast pieces with salt and pepper, and pan-fry them until fully cooked, aiming for a golden brown color. Once cooked, take the chicken out of the skillet and drain any excess fat or oil (no need to clean the pan).
  3. Place the chicken back into the skillet and drizzle with the hot sauce. Coat the chicken on both sides with the sauce and allow it to marinate while you prepare the rest of the dish. (Ensure the heat is turned off under the skillet.)
  4. In a large bowl, gently toss the salad greens with just enough Fast Blue Cheese Dressing to lightly cover them (you can add a bit of milk to thin out the dressing if it's too thick). Divide the dressed salad into two bowls. Sprinkle blue cheese crumbles over the salads. Cut the chicken into thin slices at an angle and place them on top of each salad. (Dip the slices back into the sauce if necessary for extra coating.)
  5. Sprinkle more blue cheese crumbles on top and serve with celery hearts.
  6. In a bowl, combine mayonnaise, milk, sour cream, and Worcestershire sauce, mixing until smooth. Fold in the blue cheese and season with salt and pepper to taste.
