Brussels sprouts salad with blue cheese and maple dressing

Ingredients:

  • 1 lb halved brussels sprouts
  • 2 tbsp olive oil
  • salt and pepper, to taste
  • 1/2 cup chopped pecans, toasted
  • 1/2 cup dried cranberries
  • 1/3 cup crumbled blue cheese
  • 1 tbsp maple syrup
  • 1/2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • salt and pepper, to taste

Instructions:

  1. Start by preheating the oven to 180 °C.
  2. Place the pecans on a baking sheet in the preheated oven and bake for 8-12 minutes or until they become aromatic. Allow them to cool down afterwards.
  3. While the pecans are baking, heat some olive oil in a large skillet over medium heat.
  4. Add the brussels sprouts and cook for 7-10 minutes, making sure to stir them regularly, until they turn vibrant green in color.
  5. Remove the skillet from the heat once the brussels sprouts are cooked.
  6. For the dressing, mix all the dressing ingredients in a mason jar and shake thoroughly. Alternatively, you can combine the ingredients in a bowl and whisk until well combined.
  7. Drizzle the dressing over the brussels sprouts, cranberries, and pecans, and mix them together thoroughly.
  8. Transfer the mixture to a serving bowl and sprinkle crumbled blue cheese on top.
