Broccolini, mushroom and sesame salad

Ingredients:
- 1 bunch Broccolini (340g), trimmed
- 2 cups sliced button mushrooms
- 2 tablespoons toasted sesame seeds
- 1 1/2 tablespoons apple cider vinegar
- 1 1/2 tablespoons toasted sesame oil
- 1 1/2 tablespoons soy sauce
- 1/4 teaspoon crushed red pepper
- 1 garlic clove, minced
- 1 scallion, thinly sliced
- Kosher salt
- Pepper
Instructions:
- Cook the Broccolini in boiling salted water until it turns a vibrant green color and is slightly tender, for around 2 minutes. Then, drain it and put it in a big bowl to cool down a bit. Mix in all the other ingredients, excluding the salt and black pepper, and stir everything together. Finally, add salt and black pepper to your liking before serving.
