Broccolini, mushroom and sesame salad

Ingredients:

  • 1 bunch Broccolini (340g), trimmed
  • 2 cups sliced button mushrooms
  • 2 tablespoons toasted sesame seeds
  • 1 1/2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons toasted sesame oil
  • 1 1/2 tablespoons soy sauce
  • 1/4 teaspoon crushed red pepper
  • 1 garlic clove, minced
  • 1 scallion, thinly sliced
  • Kosher salt
  • Pepper

Instructions:

  1. Cook the Broccolini in boiling salted water until it turns a vibrant green color and is slightly tender, for around 2 minutes. Then, drain it and put it in a big bowl to cool down a bit. Mix in all the other ingredients, excluding the salt and black pepper, and stir everything together. Finally, add salt and black pepper to your liking before serving.
