Broccoli salad with goat cheese

Ingredients:
- 2 heads broccoli, stems sliced thin, heads cut into small florets
- 3 tablespoons sherry vinegar or red wine vinegar
- 1 to 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 1 red onion, minced
- 1 cup dried cherries, roughly chopped
- 1 cup chopped toasted hazelnuts
- 110g goat cheese, crumbled
Instructions:
- Prepare a bowl with ice and water, and keep it to the side.
- Boil a pot of water. Put the broccoli florets and sliced stems into the boiling water and cook until slightly soft, approximately 3 minutes. Drain the broccoli and then place it into the ice water to halt the cooking process. After it cools down, drain the broccoli and move it to a salad bowl.
- Mix the vinegar, honey, mustard, and olive oil in a medium-sized bowl.
- Combine the red onions, dried cherries, and hazelnuts in the salad bowl and mix well. Pour the dressing over the salad mixture and sprinkle goat cheese on top.
