Broccoli salad with goat cheese

Delight in the perfect blend of flavors with this broccoli salad featuring creamy goat cheese. Experience culinary bliss with every bite.

Ingredients:

  • 2 heads broccoli, stems sliced thin, heads cut into small florets
  • 3 tablespoons sherry vinegar or red wine vinegar 
  • 1 to 2 tablespoons honey 
  • 1 tablespoon Dijon mustard 
  • 1 tablespoon olive oil 
  • 1 red onion, minced 
  • 1 cup dried cherries, roughly chopped 
  • 1 cup chopped toasted hazelnuts
  • 110g goat cheese, crumbled 

Instructions:

  1. Prepare a bowl with ice and water, and keep it to the side.
  2. Boil a pot of water. Put the broccoli florets and sliced stems into the boiling water and cook until slightly soft, approximately 3 minutes. Drain the broccoli and then place it into the ice water to halt the cooking process. After it cools down, drain the broccoli and move it to a salad bowl.
  3. Mix the vinegar, honey, mustard, and olive oil in a medium-sized bowl.
  4. Combine the red onions, dried cherries, and hazelnuts in the salad bowl and mix well. Pour the dressing over the salad mixture and sprinkle goat cheese on top.
