Broccoli salad
Delight in a colorful medley of fresh broccoli florets tossed with tangy dressing, crispy bacon bits, and toasted nuts in this easy-to-make broccoli salad.
Ingredients:
- Kosher salt and freshly ground black pepper
- 4 cups broccoli florets
- 1/2 cup plain yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons extra-virgin olive oil
- Zest and juice of 1 orange
- 1/2 cup shredded carrots
- 1/2 cup golden raisins
- 1 red onion, thinly sliced
- 6 slices cooked bacon, chopped
Instructions:
- Start by heating a large pot of salted water until it boils and get a bowl of ice water ready. Quickly cook the broccoli in the boiling water for 1 minute. Transfer it to the ice water until it cools down completely, then drain well.
- Combine yogurt, mayonnaise, oil, and orange zest and juice in a small bowl. Season with salt and pepper, then whisk everything together.
- Place the broccoli, carrots, raisins, and onions in a large bowl after draining them. Pour the dressing over the vegetables and mix gently to cover them. Add the bacon and toss everything together once more.
